冷蔵庫と相談 休日の午前中。 残っていた仕事を家で片付けてパソコンを閉じると、時刻はもうお昼を回ろうとしています。 ここ最近の慌ただしさからふっと解放されて、今日はどこへも出かけず、このまま家でゆっくりと過ごしたい気分。家にあるもので何か美味しいものは作れないかと、冷蔵庫と相談です。  そろそろ使ってしまいたい玉ねぎや人参、それに使いかけの鶏肉が残っていました。戸棚の奥で目が合ったのは、いつか買ったトマト缶。  「よし、野菜たっぷりのトマトカレーを作ろう」  からだが求めているのは、こういう栄養満点の一皿かもしれません。 そうと決めたら、無水鍋を取り出します。  私が愛用しているのは、HALムスイの20cm。二人暮らしにちょうどいいサイズです。 我が家に迎えて1年が経ちましたが、「炊く・蒸す・煮る・茹でる・焼く・炒める・揚げる・天火」なんでもこなす万能選手で、すっかり頼れる相棒になりました。   野菜の栄養を閉じ込める この鍋の良さは、やっぱりその名の通り「無水調理」ができること。 厚みのあるアルミ鋳物が熱をしっかりと閉じ込め、強火で煮立てずとも、やさしい熱で食材全体を均一に煮ることができ、素材を壊さず、本来の栄養を引き出せるのです。 まずは中火弱でじっくり予熱を。 食材をくっつきにくくするための、大切なひと手間です。 指先につけた水滴を落とし、丸い水玉になって転がるのを確認したら、準備万端のサイン。 オリーブオイルににんにくを入れて香りを立たせ、あり合わせの鶏肉と野菜を炒めたら、そこへトマト缶を余さず入れます。水は一滴も足しません。 材料をすべて入れたら、ずっしりとした蓋を閉めます。 隙間なく吸い付くように合わさる感覚に、職人技の精緻さを感じる瞬間です。 この「蒸気密封」こそが、栄養素を逃さないための鍵。 水に溶け出しやすいビタミンやミネラルを外に逃がさず、素材同士の旨みとともに鍋の中で調和していきます。  蓋が小さな音を立て始めたら沸騰の合図。あとは火を弱めて、30分ほど鍋におまかせです。   炊き置きごはんと、私の習慣  カレーを煮込んでいる間に、ご飯の準備に取り掛かります。 実は白米も、昨日この無水鍋で炊いたもの。数日分をまとめて炊いてストックしておくのが、我が家のリズムです。 もともとお米を炊くために開発されたというだけあって、その実力は折り紙付き。浸水させてから火にかけて10分、そのまま10分蒸らすだけで、あっという間にふっくらと炊きあがります。 土鍋ご飯も好きなのですが、仕事の日など日常使いには、この無水鍋が活躍することが多いです。  ...
