・Store away from direct sunlight, high temperatures, and high humidity.
・Do not wash with water. If it gets dirty, wipe it with a cloth wrung out in water.
・If the wood surface becomes dry, apply beeswax wax or edible oil (such as olive oil, linseed oil, or perilla oil) and wipe thoroughly.
・If not using for a long period, remove the contents to prevent deterioration of the mill blades and spices.
・The color of the wood may change over time.
・Only black pepper and white pepper can be used.
・Please refrain from using salt or pink pepper.
・Use well-dried, oil-free pepper with a grain size of approximately 2-5mm.
・Some shapes may not be grindable.

Mokkou YamaniA wooden spice mill that is beautiful just by being there, and blends seamlessly into everyday life.
These spice mills are crafted by "Mokkou Yamani," the workshop of husband and wife Shohei and Mirai Uchiyama, based in Omachi City, Nagano Prefecture.
There are two types, "pepper mill" and "salt mill," and not only do they have unique forms, but their feel in the hand is also exceptional. They are masterpieces that truly stand out.
Shohei and Mirai entered the Woodcraft Department of the Kiso Technical College in Nagano Prefecture in the same year. Shohei began making pepper mills because he loved black pepper and wanted to create a tool that could grind it more deliciously himself. From there, through repeated trial and error, over 170 different shapes were born. The forms are characterized by the intertwining of curves and linear lines, creating quiet yet somewhat uninhibited depressions. The pepper mill has a gold knob screw, while the salt mill has a silver one. Driven by the desire to use Japanese-made products, they apparently use blades manufactured by "IKEDA," a company highly regarded by professionals in hotels and restaurants for their spice mills. First, remove the knob screw and the top part to replenish the spices. You can also adjust the grind size by adjusting how tightly the knob screw is fastened. Pepper is perfect not only for meat and fish dishes but also for finishing salads and pasta, and classic carbonara, in particular, is so compatible that you'll want to repeat it again and again. As the mill glides comfortably in your hand, the aroma of spices wafts up with each grind of pepper, filling the dining table with excitement. Please do try holding a spice mill from "Mokkou Yamani" at least once; it shines with their love for pepper and their exquisite craftsmanship and sensibility.
After graduation, Shohei worked in furniture production at a joinery shop, and Mirai gained experience at an upholstery workshop, both pursuing careers related to wood.
In 2018, Shohei became independent under the name "Mokkou Yamani."
Then, from 2020, Mirai joined, and their collaborative work as a couple officially began.
Grinding Fragrance, Weaving Form
It seems that it all started with the black pepper used in the green onion ramen served at a local ramen shop.
The passion poured into these pepper mills is palpable.
The names are also playful and charming, inspired by familiar objects like "nasu" (eggplant) and "iwashi" (sardine).
Organic Design
These unique shapes are said to be created using a woodworking lathe, a technique used for furniture such as table and chair legs.
I was surprised to hear that they drew inspiration from various designs, both Western and Eastern, including the legs of foreign Windsor chairs they admired, legs of low tables, as well as Buddhist implements and kokeshi dolls.
I personally use two convenient sizes for home use, differentiating their use depending on the location and occasion.
The larger type in the photo is tall and can hold plenty of spices, making it very convenient for daily use in the kitchen.
On the other hand, the smaller type is compact and perfect for enjoying freshly ground spices at the dining table.
The natural wood grain and the harmoniously classic gold and silver knob screws subtly add an accent.
Grinding as if Cutting
These Japanese-made blades are said to grind by "cutting" rather than "crushing" or "mashing," resulting in a more fragrant grind and long-lasting sharpness.
The satisfying crunching sound and feel of the grind are also distinctive and might just become addictive.
Another great point is that in case of malfunction or damage, they offer paid repair services for the wooden parts and blade replacement.
It's wonderful to know that you can cherish it for a long time and enjoy how it seamlessly integrates into your life the more you use it.
How to Use
With the knob screw loosened, grip the body and turn the top part clockwise to grind.
For a coarse grind, loosen the screw; for a fine grind, tighten the screw slightly.
However, be careful not to turn the top part when the screw is fully tightened, as this could cause damage.

一年ぶりの再会を漆のお椀でおもてなし 先日、わが家に嬉しいお客さまがいらっしゃいました。福井県・鯖江から足を運んでくださったのは、土直漆器の土田さん。お会いするのは、およそ一年ぶりです。作り手の方と直接お話しできる時間は、私にとって楽しみのひとつ。久しぶりにお会いした土田さんは相変わらず穏やかで、顔を合わせた瞬間から自然と会話が弾みました。 せっかく遠くから来てくださったので、ささやかなおもてなしを。以前、土直漆器さんに作っていただいた「雑煮椀」に、抹茶ゼリーや白玉、あんこを盛り付けてお出ししました。普段はお雑煮や汁ものを盛ることの多いお椀ですが、この日は少し趣を変えて、甘いものを。 漆器って、もっと自由でいい 漆のお椀に甘味を盛っても大丈夫かな、と出す直前まで少し気になっていたのですが、テーブルに並べると、土田さんはとても喜んでくださって。 「福井には、漆器にパフェを盛って出しているカフェもあるんですよ。だから、こういう使い方も全然OKです!」 そう言って笑顔で召し上がる姿に、私もすっかり安心しました。 漆器というと、どうしても「特別な日に使うもの」と少し構えてしまうところがあります。でも、こんなふうに甘いものを盛ってみたり、普段の食卓に取り入れてみたり。作り手の方から「もっと自由に使っていい」と聞くと、漆器との距離が少し近くなったような気がします。 そんな話をしながら、和やかにお茶の時間を過ごしていると、いつの間にか話題は「漆」のことへ。「最近、自分で金継ぎに挑戦してみたんですよ」と、先日のコラムで紹介した「辻田の金継ぎ」の話をしたときのことでした。 「あ、辻田さん!知り合いですよ」 思いがけないひと言に、びっくり。聞けば、辻田さんと土田さんは、同じ福井で漆に携わる作り手同士。以前からつながりがあったそうです。心惹かれたものの背景に、こんなふうに作り手同士のつながりがあると知ると、なんだか嬉しくなります。ひとつのうつわをきっかけに、また新しいご縁を知ることができたような気がしました。 はじめて出会った若狭塗 そんな話に花を咲かせていると、土田さんが大事そうに包みを開いて、ひとつのお椀を見せてくれました。 それが、若狭塗の「合鹿椀(ごうろくわん)」です。 包みを開いた瞬間、まず目に入ったのは、深い漆の艶と、外側に浮かぶ細かな模様。見る角度によって光の表情が変わり、ひと目見た瞬間に心を奪われました。 若狭塗は、卵の殻や青貝、松葉などを使って模様をつくり、その上から漆を幾重にも塗り重ね、最後に表面を研いで模様を浮かび上がらせる技法。なかでも、最後の「研ぎ出し」が若狭塗の大切な工程なのだそうです。 どこを、どのくらい研ぐのか。塗り重ねられた漆の下にある模様を見極めながら、少しずつ表情を引き出していく。その工程には、職人の経験と技術が詰まっています。 この見事な若狭塗を手がけたのは、福井県小浜市で100年以上続く「加福漆器店」の4代目、加福宗徳さん。小浜市に3人しかいない若狭塗伝統工芸士のお一人です。 ふたつの工房がつないだ一椀 さらに心を惹きつけられたのは、このお椀がふたつの工房の手仕事のリレーから生まれているということでした。 木地づくりから内側と底の漆塗りまでを手がける土直漆器さんと、外側の若狭塗を手がける加福漆器店さん。 内側には、欅(けやき)の木地に漆を塗り重ねる「木地呂塗(きじろぬり)」が施され、漆の艶の奥から美しい木目が浮かび上がります。外側の青貝や松葉が散りばめられた華やかな若狭塗とはまた違う、木そのものの温もりを感じる趣です。 それぞれの工房で受け継がれてきた技術が、ひとつのお椀のなかで見事に重なり合う。内と外で異なる表情を持つからこそ、手に取るたびにじっくりと眺めたくなる。なんとも贅沢な手仕事を見せていただいた気持ちになりました。 最後のひとつをわが家へ このお椀が完成するまでには、なんと2年もの歳月がかかったそうです。そして、つくられたのはわずか10個。 そんな貴重なお椀ですが、今回、土田さんの手元に残っていた最後のひとつを、特別にお譲りいただけることになりました。 土田さんとの久しぶりの再会から、思いがけず若狭塗のお椀に出会い、最後のひとつをわが家に迎えることになるとは。いくつものご縁が重なって手元に迎えることができたことを嬉しく思います。 これほど美しいお椀を、すぐに料理に使うのは少しもったいない気もして。しばらくは、光の加減で変わる青貝のきらめきや、漆の艶、内側に広がる欅の木目を、じっくり眺めていたい。...
